Favourite Food Recipe - Carrot Mugcake
There is no better satisfaction you can get after an amazing training session... than an amazing breakfast. And I am a massive breakfast lover. I usually train in the morning and have breakfast after my gym session so I want my breakfast to be fuelling and full of great and tasty ingredients. But also I want my breakfast to be easy to do and sometimes I do even prepare it in the evening so I can just quickly grab it in the morning and not to worry about cooking when I am busy. And when that happens - this Carrot Mugcake is lately my most favourite to-go option.
It is easy to do, you need just a few basic ingredients, you can prepare it in the evening and leave it in the fridge overnight so you can just quickly grab it after training and enjoy the amazing taste and texture of it.

Ingredients:
100g of finely grated carrot
20g of oats
30g of protein powder (I prefer banana or vanilla flavour for this recipe)
A little bit of a cinnamon
A little bit of baking powder
1 egg
1/2 of mashed banana
15g of sliced almonds or walnuts
Toping:
150g of Onken Natural Set Yoghurt (or any other unflavoured natural or Greek yoghurt)
15g of Powdered Peanut Butter + water to mix it with + pinch of salt
In a bowl, mix all wet and dry ingredients and put them into the microwave for about 3 minutes. The time depends on your microwave settings. Take the mugcake off the microwave once it's cooked properly and let it rest for about 10-15 minutes. After 10-15 minutes slice the mugcake into 4 parts (you can easily do so just by using the spoon, the mugcake is nicely soft) and put the yoghurt on the top. Shake the bowl gently and let the yoghurt get in between all 4 parts of mugcake. After that just mix the powdered peanut butter with water to get the desired texture (do not forget the pinch of salt - it works perfectly with the sweet flavour of peanuts) and pour it on the top of the mugcake.
You can either eat the mugcake immediately after or you can leave it in the fridge overnight and enjoy it in the morning. It is amazingly delicious, the texture is so nice and soft and it is surprisingly fuelling. The advantage of preparing this mugcake in the evening and leaving it to rest for few hours is, that the mugcake will infuse the watery part of yoghurt, will become softer, will not be dry and the yoghurt on the top will remain in a creamy texture.

If you need to modify the size of your portion or amount of certain macronutrients, you can always increase or decrease the amount of oats, protein powder or yoghurt for your toping.
